What now seems like a long time ago,
we decided to venture into
chocolate. One day I had a little
time and was digging through a
myriad of recipes I had saved and
deemed worthy of a future try. A
newspaper recipe for caramel
practically jumped out of the huge
box. It sounded delicious and didn’t
look all that complicated. The
outcome was truly a delicious
surprise of tasty, rich, smooth,
gooey yumminess. I had always wanted
to make Turtles, but wouldn’t even
consider producing them for sale
unless they were at least as good as
the ones sold at The Galena Kandy
Kitchen. We waited patiently until
fall when we would be in the Galena
area and could purchase one of their
delicious Pecan Georgies (Turtles). Our
three daughters, my husband and I
had always thought that they were
just absolutely the best.
You can’t imagine the excitement and
enthusiasm we had during our ride
home in anticipation of finally
being able to taste test and compare
the
Pecan Georgies
with our chocolate
covered pecan caramel goodies.
I do have to interject here that
during the time we were awaiting our
great taste off that we spent the
better part of the summer acquiring
chocolate samples and holding blind
test tastes to choose the chocolates
that Brittles would ultimately use.
Anyway, our candies, in our
judgment, were far and away much,
much better. So, adding them to our
list of products was a no brainer.
Now we had to decide what we were
going to call these delectable tasty
treats. I asked each of our
daughters if they would like to have
the candy treats named after them.
It was a resounding NO from each and
everyone. Then I looked down at the
floor where Hefty, our giant black
and white 145 pound Landseer, was
curled up as much as he could curl
up and said, “Guess you get the
honor of having the candy named
after you,” and so the name Hefties
was born. As far as I could tell, he
was entirely agreeable to the whole

Hefty’s front paws are on a
snowmobile and his hind paws are on
the ground. He is standing next to
my husband who is 6’4”--
just to put Hefty's size in
perspective. Hefty, our empty nest
puppy, was born on December 14,
1994, and died September 6, 2006. He
is truly missed.

Brittles products are made with milk and
dark chocolates which have a more costly
blend of chocolate liquor and cocoa
butter. This chocolate offers a
distinctively different profile – very
smooth, somewhat less sweet and a bit
more subtle, in an elegant European
style.
Our white chocolate creations use a rich
cream color and cocoa butter-based,
whole milk coating. It has a delicate
chocolate aroma and flavor.
Combine any of the delectable chocolates
with our heavenly, rich, creamy caramel,
toss in a few flavorful pecans and you
have our luscious pecan Hefties.
Almonds, roasted salted cashews, roasted
salted macadamia nuts and roasted salted
peanuts culminate our appetizing nut
selection for our savory Hefties.

every bite. A combination of the purest extracts of
almond and vanilla adds to the flavor of the dark,
rich roasted almond brittle. The almond
brittle is then broken into bite-sized pieces and
each bite-sized piece is either hand dipped or run
through our enrober. With either process, the
thin, crunchy almond brittle is encased with our
